AIP Pumpkin & Butternut Squash Soup

Hi there!
I love it when the weather gets chilly and the holiday celebrations begin. It's such a happy time of year filled with love and joy.
If you are looking for a warm, comforting soup recipe that's both AIP and Paleo friendly you absolutely must try my Pumpkin & Butternut Squash Soup.
It will not only warm you up on a cold winter's night, but it's packed with nutrient dense, gut healing goodness.
This is also a great recipe to accompany any holiday dinner party that your guests will love!

AIP Pumpkin & Butternut Squash Soup
INGREDIENTS
1 medium butternut squash
2 tablespoons coconut oil
1 medium sweet onion
1/2 teaspoon ground cinnamon
1/2 teaspoon ginger powder
1/2 teaspoon garlic powder
1 cup coconut milk
1 cup bone broth
1 can plain organic pumpkin
DIRECTIONS
Cut butternut squash length-wise, remove seeds, brush both halves with coconut oil.
Place squash skin side down in a glass baking dish and bake for 20-30 minutes at 400 degrees or until fork tender.
Sauté onion in coconut oil until transparent.
When onion is clear, add cinnamon, ginger and garlic, then sauté until warm.
Combine the bone broth and coconut milk in a separate pot and warm.
When butternut squash is done, allow to cool so you can safely touch it.
Once cool enough to touch scoop out the soft inside and place into a high powered blender like a Vitamix or Ninja.
Then add all the other ingredients and blend to a desired consistency.
Tip: If you are using a Vitamix blender you can continue to blend the soup until warm using the friction created by blending.
